Kohl is the darkest black there is, and it is worn at dusk. We make dark chocolate the same way: as something you put on for the evening. Bean-to-bar, seventy to one hundred percent, in tall black sleeves cut by a single stroke of foil.

The cacao scale

Seventy percent, worn light. Cacao nib gives it grain; smoked caramel draws it out, slowly, the way the sky goes amber before it goes blue. The shade to begin on.

The percentage is the share of the bar that comes from the cacao bean: cacao mass plus cacao butter. The higher the number, the less sugar and the deeper, drier the shade. Dusk sits at 70%; Void at 100% has no sugar at all.
If you are new to dark chocolate, begin at Dusk (70%) or Smoked (75%). If you already drink your coffee black, try Midnight (85%). The Dusk Flight lets you wear all six in order and decide for yourself.
